Ingredients

  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 3 Tbsp monk fruit sweetener (or preferred granulated sugar)
  • 6 Tbsp cream cheese of choice (about 3 oz)
  • 4 gluten-free sandwich cookies, crushed
  • 34 Tbsp white chocolate chips, melted (optional)

Instructions

  1. In a large bowl, combine the protein powder, coconut flour, monk fruit sweetener, cream cheese, and crushed cookies until well mixed. If the mixture is too soft, add more coconut flour; if too thick, add a splash of water or almond milk.
  2. Roll the mixture into tablespoon-sized balls and place on a plate or baking sheet.
  3. Chill in the refrigerator for about 15 minutes to firm up.
  4. If desired, melt white chocolate chips and drizzle over chilled protein balls.
