  • 3 pounds yellow or red potatoes (peeled and quartered)
  • 1/2 cup heavy cream (or coconut cream for dairy-free)
  • 1/4 cup unsalted butter
  • 12 slices turkey bacon (or your preferred alternative)
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 1/2 head of cabbage (about 6 cups, chopped)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons melted butter for garnish
  • 2 tablespoons chopped green onions for garnish

Instructions

  1. Boil the potatoes in salted water for about 12–15 minutes until fork-tender. Drain and return to the pot.
  2. Cook turkey bacon in a non-stick skillet over medium-high heat until crispy; set aside.
  3. In the same skillet, sauté diced onion and minced garlic for about 2–3 minutes until softened.
  4. Add chopped cabbage, oregano, dried herbs, and lemon juice to the skillet; cook for approximately 10 minutes until tender but still crunchy.
  5. Mash the boiled potatoes with heavy cream and butter until smooth; season with salt and pepper.
  6. Gently fold in the sautéed cabbage mixture and half of the crispy bacon until well combined.
  7. Serve warm, garnished with melted butter and remaining bacon bits, topped with chopped green onions.
