  • ¼ cup all-purpose flour
  • ¾ cup water
  • 3 ½ cups all-purpose flour
  • â…“ cup granulated sugar
  • 2 teaspoon instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 tsp instant coffee granules
  • 1 large egg (room temperature)
  • ½ tsp vanilla extract
  • 4 tablespoon unsalted butter (room temperature)
  • 5 tablespoon unsalted butter (room temperature)
  • 2/3 cup dark brown sugar (or light brown sugar)
  • 2 tsp ground cinnamon
  • 1 ½ tsp instant coffee granules
  • 2 oz cream cheese (softened)
  • 4 tbsp unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 tbsp heavy cream
  • ¾ tsp instant coffee granules

Instructions

  1. Prepare the Tangzhong by whisking together water and flour in a saucepan over medium heat until thickened. Set aside.
  2. In a mixing bowl, combine all-purpose flour, sugar, yeast, and salt.
  3. Warm milk slightly and dissolve instant coffee in it. Add to dry ingredients along with egg, vanilla extract, and Tangzhong.
  4. Knead dough until smooth; add softened butter gradually.
  5. Let dough rise in a warm place until doubled in size.
  6. Mix filling ingredients (butter, brown sugar, cinnamon, instant coffee) until smooth.
  7. Roll out dough and spread filling; cut into strips and shape rolls.
  8. Allow rolls to rise again before baking at 350°F (175°C) until golden brown.
  9. Prepare frosting by mixing softened cream cheese with butter and powdered sugar; add heavy cream and instant coffee.
  10. Frost warm rolls and enjoy!
