  • 300g treacle
  • 225g unsalted butter
  • 250g whole milk
  • 300g all-purpose flour
  • 180g granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 Tbsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp mixed spice or pumpkin pie spice
  • 1/2 tsp nutmeg
  • 1/2 tsp cardamom
  • 2 large eggs

Instructions

  1. Preheat your oven to 300°F (150°C) and prepare a loaf pan by greasing and lining it with parchment paper.
  2. In a medium saucepan over medium heat, melt together the treacle and unsalted butter. Once smooth, remove from heat and stir in the cold milk.
  3. In a large bowl, sift together all-purpose flour, sugar, baking soda, baking powder, salt, and spices.
  4. Allow the treacle mixture to cool for about 10 minutes before whisking in the eggs one at a time until combined.
  5. Pour the wet mixture into the dry ingredients and whisk until smooth.
  6. Transfer the batter into the prepared loaf pan and smooth the top.
  7. Bake for approximately 1 hour and 20 minutes, or until a skewer inserted in the center comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack.
