  • 45 pound turkey breast, bone-in, skin-on
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the softened butter with lemon zest, orange zest, chopped herbs, minced garlic, salt, and pepper.
  3. Pat the turkey breast dry and loosen the skin over the meat. Rub half of the herb butter under the skin and spread the remaining butter all over the surface.
  4. Place the turkey in a roasting pan surrounded by onion quarters and citrus slices. Pour chicken broth into the bottom of the pan.
  5. Roast uncovered for about 1 hour and 40 minutes or until an internal temperature of 165°F (74°C) is reached.
  6. Allow it to rest for 15-20 minutes before slicing and serving.
