  • 1 cup unsweetened almond or oat milk

  • 1 1/2 tsp baking powder

  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • 4 tbsp melted vegan butter (for cinnamon swirl)
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon (for cinnamon swirl)
  • 3/4 cup powdered sugar (for glaze)
  • 2 tbsp melted vegan butter (for glaze)
  • 2 oz softened vegan cream cheese (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan.
  2. In a large bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, and salt. Gradually combine with wet ingredients until just mixed.
  4. For the cinnamon swirl: Mix melted vegan butter, brown sugar, and cinnamon in a small bowl.
  5. Layer half the batter in the pan; drizzle with half the cinnamon mixture. Add remaining batter and swirl in the rest of the cinnamon mix.
  6. Bake for about 45 minutes or until golden brown; cool before serving.
  7. For the glaze (optional): Mix powdered sugar with melted vegan butter and softened vegan cream cheese until smooth. Drizzle over slices before serving.
