  • 1 pound boneless chicken breasts
  • 1 bunch cilantro
  • 4 garlic cloves (peeled)
  • 1 lime (juiced)
  • 1 tablespoon apple cider vinegar
  • 4 tablespoons olive oil
  • 1 jalapeño (seeded and chopped)
  • 4 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup corn kernels
  • 1 large avocado (diced)

Instructions

  1. In a small food processor, combine cilantro, garlic, lime juice, apple cider vinegar, olive oil, jalapeño, salt, and pepper. Blend until almost smooth.
  2. Place chicken breasts in a bowl and add 2 tablespoons of the marinade. Cover and refrigerate for at least one hour.
  3. Preheat grill to medium heat. Grill marinated chicken for about 12-14 minutes until cooked through and charred.
  4. In a large bowl, combine baby spinach, cherry tomatoes, corn kernels, and diced avocado.
  5. Slice grilled chicken and place on top of the salad. Drizzle reserved marinade over everything and gently toss to combine.
