  • 4 large eggs
  • ¾ cup granulated sugar
  • 1½ cups whole milk
  • 1 cup heavy cream
  • 1½ tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C). Fit the pie crust into a 9-inch dish, line it with parchment paper, and fill with weights. Bake for 15 minutes, remove weights, bake for another 5 minutes until golden, then cool.
  2. In a saucepan over medium heat, combine milk and cream with cinnamon and vanilla. Heat until steaming but don’t boil. If using whole spices, steep them for about 10 minutes before removing.
  3. In a bowl, whisk eggs, sugar, and salt until smooth.
  4. Gradually whisk warm milk mixture into egg mixture to temper the eggs; strain for smoothness.
  5. Lower oven temperature to 325°F (160°C). Pour custard into crust and bake for 35–40 minutes until edges are set but center jiggles slightly.
  6. Cool at room temperature before chilling in the fridge for at least two hours.
