  • 1 1/2 cups water
  • 1 1/2 cups white granulated sugar
  • 1/2 cup sugar (or super fine sugar)
  • 8 oz fresh cranberries
  • 1 cup white granulated sugar
  • 1/2 Tbsp vanilla extract
  • 1½ cups graham cracker crumbs
  • ¼ cup brown sugar
  • 5 Tbsp butter (melted)
  • 1 tsp vanilla extract
  • 24 oz cream cheese (softened)
  • ¾ cup heavy whipping cream
  • 2 Tbsp sour cream
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 Tbsp corn starch
  • ½ cup white granulated sugar
  • 1 vanilla bean
  • 8 oz baking white chocolate bars (24 oz bars)
  • 8 oz cream cheese (softened)
  • 8 oz whipped topping like COOL Whip

Instructions

  1. Prepare candied cranberries by soaking fresh cranberries in a sugar-water syrup overnight.
  2. Cook down fresh cranberries with sugar and vanilla to create quick cranberry jam.
  3. Preheat oven to 325°F and prepare a springform pan with a water bath.
  4. Mix graham cracker crumbs, brown sugar, butter, and vanilla; press into the pan for the crust.
  5. Layer half of the cranberry jam over the crust.
  6. Beat cream cheese with sugar; add eggs, sour cream, heavy cream, and vanilla bean seeds until smooth.
  7. Pour filling over jam layer; bake for 70-75 minutes until just set.
  8. Cool in the oven, then chill before adding remaining cranberry jam and white chocolate mousse topping.
