  • 1 red apple (diced)
  • 1 anjou (or bartlett pear, diced)
  • ½ red onion (chopped)

  • â…“ cup crumbled feta cheese
  • â…” cup pecans (or walnuts)
  • â…“ cup brown sugar
  • ¼ teaspoon cinnamon
  • â…“ cup apple juice
  • â…“ cup apple cider vinegar
  • â…“ cup olive oil
  • 2 tablespoons honey
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the dressing by combining apple juice, apple cider vinegar, olive oil, honey, and black pepper in a jar. Shake well and set aside.
  2. In a large bowl, mix chopped romaine lettuce with diced apples and pears, chopped onion, dried cranberries, and crumbled feta.
  3. For the candied pecans, toast nuts in a pan over medium heat for 1-2 minutes. Add brown sugar and cinnamon; stir to coat until sugar dissolves. Cool and chop.
  4. Just before serving, toss the salad with dressing and top with candied pecans.
