  • 42 g sourdough starter
  • 42 g water
  • 42 g all-purpose flour
  • 350 g water (divided)
  • 10 g salt (2 tsp)
  • 500 g bread flour (4 cups)
  • 113 g unsalted butter (½ cup)
  • 235 g chocolate chips (1½ cups)

Instructions

  1. Feed your sourdough starter by mixing it with 42g of water and 42g of all-purpose flour. Allow it to activate.
  2. In a bowl, combine the levain with 350g of water and salt. Gradually add in 500g of bread flour until you have a cohesive dough.
  3. Knead on a floured surface for about 10 minutes until smooth, then let it rest in an oiled bowl for an hour.
  4. Roll out the dough into a rectangle, spread softened butter over two-thirds, and fold as directed to create layers. Repeat folding twice more.
  5. After the final roll, sprinkle chocolate chips evenly before rolling into a log shape and cutting into eight pieces.
  6. Place pieces in a greased loaf pan or on parchment paper and allow them to rise until puffy (about one hour).
  7. Preheat the oven to 375°F (190°C) and bake for about 40 minutes until golden brown.
