  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1â…“ cups mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix vanilla wafer crumbs and brown sugar. Add melted butter and combine well. Press into a pie dish and bake for about 10 minutes until golden. Cool completely.
  2. In another bowl, blend mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, and lemon zest until smooth. Fold in ricotta cheese until fully combined.
  3. Whip heavy cream in a separate bowl until soft peaks form. Gently fold into the mascarpone mixture for lightness.
  4. Fold in one cup of mini chocolate chips and spoon the filling into the cooled crust. Top with remaining chocolate chips if desired.
