  • 2 cups chopped English cucumber
  • 1 1/4 cups chopped Roma tomatoes
  • 1/4 cup chopped red onion
  • 3 Tbsp chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 1/2 tsp minced garlic
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the rinsed chickpeas, chopped cucumber, Roma tomatoes, red onion, and parsley.
  2. In a separate measuring cup, whisk together the olive oil, fresh lemon juice, minced garlic, Italian seasoning, salt, and pepper until well combined.
