  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. Marinate the chicken by mixing olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper in a bowl. Coat the chicken breasts evenly and refrigerate for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side until fully cooked (165°F/75°C). Let it rest before slicing.
  3. Prepare the tzatziki sauce by combining Greek yogurt, lemon juice, minced garlic, salt and pepper in a bowl. Fold in diced cucumber.
  4. Assemble the bowls by placing a scoop of rice or quinoa at the base, topped with sliced chicken, diced cucumber, cherry tomatoes, and red onion.
  5. Finish with a generous dollop of tzatziki sauce.
