  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 lb penne pasta
  • Pinch of nutmeg (optional)

Instructions

  1. Cook penne pasta according to package directions until al dente. Drain and reserve about ½ cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; add to skillet and cook until browned and cooked through. Remove from skillet.
  3. In the same skillet, sauté chopped onion until softened, then add minced garlic and cook until fragrant.
  4. Stir in thawed spinach, chicken broth, and heavy cream; simmer for a few minutes to thicken.
  5. Mix in grated Parmesan cheese and return the chicken to the skillet. Add cooked penne pasta and toss gently to combine. If the sauce is too thick, add reserved pasta water as needed.
  6. Serve warm with extra Parmesan cheese on top.
