  • 8 bone-in skin-on chicken thighs
  • 12 cloves garlic
  • 2 pints cherry tomatoes
  • 1 cup green olives
  • ½ cup halved dates
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons extra-virgin olive oil
  • 3 to 4 sprigs fresh thyme or 1 tablespoon dried thyme
  • 6 medium shallots, peeled and halved
  • 1 cup apple cider vinegar
  • 4 cups cooked rice
  • 4 cups cooked polenta
  • 4 cups mashed potatoes
  • Crusty bread

Instructions

  1. Preheat oven to 400°F.
  2. Season chicken thighs with salt and pepper.
  3. In an oven-proof pan, heat olive oil over medium-high heat and sear chicken skin-side down until golden brown.
  4. Flip chicken and add garlic, shallots, tomatoes, dates, olives, and thyme around it.
  5. Pour in apple cider vinegar and bring to a simmer; then cover and transfer to the oven.
  6. Bake until chicken reaches an internal temperature of 165°F.
  7. Serve over rice, polenta, or mashed potatoes.
