  • 3 large chicken breasts
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil
  • 4 tablespoons butter (divided)
  • 8 ounces cremini mushrooms (sliced)
  • 2 cloves garlic (minced)
  • Flour (for dredging) + 2 tablespoons flour
  • 1/2 cup apple juice
  • 1.5 cups heavy cream
  • 6 slices Muenster cheese

Instructions

  1. Preheat oven to 375°F; prep your ingredients.
  2. Cut chicken breasts in half lengthwise; season with salt and pepper, then coat lightly in flour.
  3. In a skillet with olive oil and one tablespoon of butter, brown chicken for about 3–4 minutes per side; transfer to a casserole dish.
  4. Add remaining butter to the skillet; sauté mushrooms until browned, then layer them over the chicken.
  5. Make a cream sauce by cooking garlic and flour in the skillet, then whisking in apple juice and cream until thickened.
  6. Pour the sauce over chicken and mushrooms; top with cheese.
  7. Cover with foil and bake for 20 minutes, then broil briefly until cheese is golden.
  8. Let rest before serving.
