  • 2 large boneless skinless chicken breasts
  • 8 ounces uncooked fettuccine
  • 4 ounces cream cheese (softened)
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1 cup freshly grated parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 3 tablespoons butter (divided)
  • 2 large cloves garlic (minced)

Instructions

  1. Soften cream cheese at room temperature. Cook fettuccine in a large pot of salted water until al dente.
  2. Cut chicken breasts in half; season with garlic powder, salt, and pepper. Dredge lightly in flour.
  3. Heat olive oil and one tablespoon of butter in a skillet over medium-high heat. Sauté chicken until golden brown (about 5 minutes per side). Remove from pan.
  4. In the same skillet, melt remaining butter; stir in softened cream cheese, heavy cream, chicken broth, and minced garlic until smooth.
  5. Simmer the sauce for about five minutes; then stir in parmesan cheese until melted.
  6. Toss the drained fettuccine into the sauce until fully coated. Slice chicken and place it on top or mix it into the pasta.
