  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6–7 minutes per side until cooked through. Let rest before slicing.
  2. Slice avocado, onion, and tomato while chicken rests.
  3. Spread mayonnaise and Dijon mustard on each slice of bread. Layer chicken, avocado, cheese, onion, and tomato on two slices; top with remaining bread.
  4. Heat a skillet over medium heat with butter or olive oil. Grill sandwiches for 3–4 minutes per side until golden brown and cheese melts.
  5. Allow to cool slightly before slicing in half.
