  • 2 large chicken breasts (chopped)
  • 3 cups broccoli florets
  • 4 tablespoons cream cheese
  • 1/2 cup plain Greek yogurt
  • 1/2 cup shredded Parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 3 tablespoons olive oil (divided)
  • 2 shallots (minced)
  • 6 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly grated black pepper
  • 2 teaspoons Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper; place cut-side down on a baking sheet.
  2. In a skillet over medium heat, sauté chopped chicken with minced shallots, garlic, salt, pepper, and Italian seasoning until golden brown.
  3. Add broccoli florets to the skillet; cook until bright green and tender.
  4. In a bowl, combine the chicken-broccoli mixture with cream cheese, Greek yogurt, Parmesan cheese, and mozzarella cheese until well mixed.
