  • 3 large russet potatoes, diced
  • 2 tablespoons olive oil
  • 3 tablespoons ranch seasoning mix
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper.
  2. Wash and dice the russet potatoes into bite-sized cubes.
  3. In a large bowl, toss the diced potatoes with olive oil, ranch seasoning mix, garlic powder, salt, and pepper until evenly coated.
  4. Spread the seasoned potatoes in a single layer on the baking sheet.
  5. Roast in the oven for about 25–30 minutes, flipping halfway through until golden brown.
  6. Sprinkle shredded cheddar cheese over the hot potatoes and return to the oven for an additional 5 minutes or until melted.
