  • 2 tablespoons fresh rosemary (finely chopped)
  • 2 tablespoons fresh parsley leaves (finely chopped)
  • 2 garlic cloves (crushed)
  • 3 tablespoons extra virgin olive oil
  • 2¼ cups plain flour
  • 1 teaspoon baking soda
  • ½ cup plain yogurt
  • ¾ cup full-fat milk
  • 2 large eggs
  • 50 grams (3½ tablespoons) unsalted butter (melted)

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a greased loaf pan.
  2. In a bowl, mix together the rosemary, parsley, crushed garlic, olive oil, and salt.
  3. In another bowl, combine flour, baking soda, and salt.
  4. In a separate bowl, whisk yogurt, milk, eggs, melted butter, and additional garlic until smooth.
  5. Create a well in the dry ingredients and combine with wet ingredients gently; do not overmix.
  6. Layer one-third of the batter in the loaf pan followed by one-third of the herb mixture and cheese. Repeat twice.
  7. Bake for about 30 minutes until golden; cover with foil and bake for an additional 20 minutes. Cool before slicing.
