  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups finely shredded carrots
  • 16 oz cream cheese, softened
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. For the carrot cake layer: In one bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat eggs, sugars, oil, and vanilla until smooth. Combine dry ingredients with wet and fold in carrots. Pour into the prepared pan.
  3. For the cheesecake layer: Beat cream cheese until smooth; mix in sugar and flour until lump-free. Add eggs one at a time and stir in sour cream. Pour over the carrot cake layer.
  4. Bake for 50–60 minutes until just set with a slight jiggle in the center. Cool in the oven with door ajar for about 30 minutes.
  5. Chill completely in the fridge for at least 4 hours or overnight before serving.
