  • 1 large seedless cucumber
  • 1 cup julienned carrots
  • 1 tbsp avocado oil
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tsp sugar
  • 2 tsp low sodium soy sauce
  • 2 tbsp minced fresh cilantro
  • 2 tsp toasted sesame seeds
  • Optional: crushed red chili flakes

Instructions

  1. Prepare the vegetables by washing the cucumber and slicing it into thin rounds. Peel and julienne the carrots.
  2. In a bowl, whisk together avocado oil, rice vinegar, sesame oil, sugar, low sodium soy sauce, ground ginger, and optional chili flakes until well combined.
  3. In a large mixing bowl, combine the cucumber and carrots. Drizzle the dressing over the vegetables and toss gently until evenly coated.
