- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 2 tablespoons basil pesto
- 5 cloves garlic (minced)
- 1 cup sour cream
- 1/2 cup fresh chopped basil
- 8 ounces low-moisture mozzarella cheese (cut into chunks)
- 8 ounces shredded provolone cheese
- 1/4 cup freshly grated parmesan cheese
- Preheat your oven to 400°F (200°C).
- In a baking dish, toss cherry tomatoes with olive oil, pesto, minced garlic, salt, and pepper. Roast for 15 minutes.
- In a bowl, combine sour cream and chopped basil; mix in mozzarella chunks, provolone, and parmesan.
- After roasting the tomatoes, layer the cheese mixture on top and add halved cherry tomatoes.
- Bake for an additional 20 minutes until the dip is bubbly and golden.
