  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • 1/2 cup fresh chopped basil
  • 8 ounces low-moisture mozzarella cheese (cut into chunks)
  • 8 ounces shredded provolone cheese
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss cherry tomatoes with olive oil, pesto, minced garlic, salt, and pepper. Roast for 15 minutes.
  3. In a bowl, combine sour cream and chopped basil; mix in mozzarella chunks, provolone, and parmesan.
  4. After roasting the tomatoes, layer the cheese mixture on top and add halved cherry tomatoes.
  5. Bake for an additional 20 minutes until the dip is bubbly and golden.
