Instructions

  1. Slice the lemons thinly (about 1/4-1/8 inch) and remove any seeds.
  2. In a large saucepan, combine the water and granulated sugar over medium heat until the sugar dissolves.
  3. Add the lemon slices into the syrup and simmer on low heat for about an hour, flipping every 15 minutes.
  4. Once translucent and tender, place them on parchment paper to dry for 24 hours.
  5. After drying, sprinkle with the remaining sugar for coating.
