  • 6 sheets roasted seaweed (nori)
  • 1 cup crispy fried onions or tempura flakes
  • 2 tablespoons toasted sesame seeds (optional)
  • 3 tablespoons mayonnaise
  • 1 tablespoon sriracha or chili sauce (adjust to taste)
  • 1 tablespoon unseasoned yogurt-based sauce for a lighter alternative
  • Soy sauce for dipping

Instructions

  1. Rinse 2 cups of short-grain rice under cold water until clear. Cook according to your preferred method.
  2. In a small saucepan, combine ¼ cup rice vinegar, 1 tablespoon sugar, and ½ teaspoon salt over low heat until dissolved. Mix this with the cooked rice while it’s still hot.
  3. Prepare fillings: shred cooked fish or tofu as needed; slice avocado and julienne cucumber.
  4. On a bamboo mat lined with plastic wrap, place a sheet of nori shiny side down. Spread an even layer of sushi rice on top, leaving a border at the top.
  5. Flip the nori so the rice side is down; add fillings across the lower third. Roll tightly using the bamboo mat, sealing with water at the edge.
  6. Top with mayonnaise and crispy onions before slicing into bite-sized pieces.
