  • 4 tablespoons butter (melted, divided)
  • 1 teaspoon minced garlic
  • 1 pound large shrimp (peeled and deveined)
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cracked black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper flakes
  • Fresh parsley (for garnish)

Instructions

  1. In a bowl, whisk together all Cajun seasoning ingredients including paprika, salt, garlic powder, black pepper, onion powder, oregano, cayenne pepper, and crushed red pepper flakes.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and half of the Cajun seasoning mix; stir in rice and toast slightly.
  3. Pour in chicken broth; bring to boil then reduce to simmer. Cover and cook for about 15 minutes.
  4. Meanwhile, coat shrimp in melted butter mixed with remaining Cajun seasoning.
  5. Once rice is fluffy, gently stir in seasoned shrimp. Cover and cook for an additional 3-5 minutes until shrimp are pink and opaque.
  6. Serve hot with chopped parsley on top.
