  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup tomato sauce
  • 1 tsp brown sugar (optional, rounds heat)
  • salt (to taste)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz sharp cheddar cheese, shredded
  • 1/4 tsp paprika
  • 4–6 brioche hamburger buns (split, toasted)
  • softened butter (for toasting, as needed)
  • freshly ground black pepper (to finish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add ground chicken and cook until no longer pink (5–7 minutes). Stir in onion and cook until translucent (3–4 minutes). Add garlic and Cajun seasoning; cook for another minute.
  2. Mix in tomato paste, then pour in broth and tomato sauce. Simmer uncovered for about 8–10 minutes until thickened. Season to taste.
  3. For the cheese sauce, melt butter in a saucepan over medium heat. Whisk in flour until combined. Gradually add milk while stirring for about 4–5 minutes until thickened. Stir in cheese until melted.
  4. Toast brioche buns, then spoon cajun chicken filling onto each bun and drizzle with cheese sauce before serving.
