  • 2 gala apples (peeled, cored, diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons butter (or plant-based alternative)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine butternut squash, apples, cinnamon, vanilla extract, and brown sugar; mix well.
  3. Season the mixture with salt and black pepper; stir again.
  4. Pour the mixture into a baking dish and evenly distribute it. Dot with butter before covering.
  5. Bake covered for about 15 minutes.
  6. Remove from oven, add raisins, cranberries, and pecans; gently mix.
  7. Cover again and return to the oven for another 15 minutes until tender and lightly browned.
