  • ½ pound lean ground beef
  • ½ cup diced yellow onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoons taco seasoning
  • 8 ounces shredded Colby jack cheese
  • 12 ounces tortilla chips (about of a bag)

Instructions

  1. Preheat your oven to 450°F (232°C) and spray a bundt pan with cooking spray.
  2. In a skillet over medium-high heat, cook ground beef and diced onion with salt and pepper until no pink remains (about 6–7 minutes). Drain excess fat.
  3. Stir in water and taco seasoning; cook for an additional couple of minutes.
  4. Layer half the cheese at the bottom of the bundt pan, followed by half the beef mixture, then about ⅓ of the tortilla chips.
  5. Repeat layers with remaining cheese, beef mixture, and another third of tortilla chips.
  6. Bake for 10 minutes until everything is melty but holds its shape.
  7. Invert onto a plate, garnish with desired toppings like sour cream, diced tomatoes, or chopped cilantro, and serve warm.
