  • 2 boneless, skinless chicken breasts
  • 1/2 cup hot buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup crumbled blue cheese
  • 1/4 cup ranch dressing
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Coat chicken breasts evenly with the seasoning mixture.
  4. Place the seasoned chicken in a baking dish and bake for 20-25 minutes until fully cooked.
  5. Let chicken rest for a few minutes before slicing into strips.
  6. In a large bowl, combine cooked brown rice with corn, black beans, cherry tomatoes, and red onion.
  7. Divide the rice mixture into serving bowls and top with sliced chicken.
  8. Add avocado slices, crumbled blue cheese, and drizzle with ranch dressing.
