3/4 cup light brown sugar (packed)
1 teaspoon cinnamon
2 Tablespoon cake flour
1 cup powdered sugar
1/2 teaspoon cinnamon
3 Tablespoons unsalted butter (melted and cooled)
2 1/2 Tablespoon milk
Instructions
Cream together unsalted butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla, mixing until well combined.
In a separate bowl, whisk cake flour, cornstarch, baking soda, baking powder, and salt. Gradually incorporate the dry mix into the wet ingredients until dough forms.
Chill the dough for one hour in the refrigerator.
Prepare the filling by combining softened butter, brown sugar, cinnamon, and cake flour until smooth.
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Scoop out cookie dough, fill with the cinnamon mixture, seal properly, and shape into balls.
