  • 390 g all-purpose flour
  • 320 g dark brown sugar
  • 15 g baking powder
  • 1 teaspoon kosher salt
  • 1 tbsp cinnamon
  • 2 tsp cardamom
  • 1 tsp ginger
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 140 g unsalted butter (room temp)
  • 100 g neutral oil
  • 283 g whole milk (room temp)
  • 2 eggs (room temp)
  • 1 tbsp vanilla extract
  • 227 g unsalted butter (room temp)
  • 12 oz cream cheese (cold)
  • 340 g powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, cardamom, ginger, allspice, nutmeg, and cloves.
  3. In another bowl, beat together the unsalted butter and dark brown sugar until light and fluffy.
  4. To your creamed butter and sugar mixture, add in the oil, whole milk, eggs, and vanilla extract. Mix until just combined.
  5. Gradually fold in your dry ingredients into the wet mixture until everything is incorporated.
  6. Divide your batter evenly between prepared cake pans and smooth out the tops. Bake for about 35 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, let your cakes cool in their pans for about 10 minutes before transferring them to wire racks. Allow them to cool completely before frosting.
  8. In another bowl, beat together room temperature unsalted butter and cold cream cheese until smooth. Gradually add powdered sugar while mixing until you reach a fluffy consistency.
  9. Once cooled completely, frost between the layers of your cakes as well as on top and around the sides.
