  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning
  • Salt and pepper to taste
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano

Instructions

  1. Pound chicken breasts to ÂĽ inch thickness and season with olive oil and blackened seasoning.
  2. Heat skillet over medium-high heat with 2 tablespoons of olive oil; cook seasoned chicken for 3-4 minutes until dark amber.
  3. Flip chicken, reduce heat to low, add butter and garlic; cook until internal temperature reaches 165°F (about 5-6 more minutes).
  4. Remove chicken and let rest covered in foil.
  5. In the same skillet, melt remaining butter; sauté garlic until fragrant.
  6. Pour in heavy cream and blackened seasoning; simmer until thickened (about 5 minutes).
  7. Cook pasta according to package instructions; reserve starchy water before draining.
  8. Stir parmesan into sauce until melted; mix in reserved pasta water and cooked noodles.
  9. Serve topped with sliced chicken and additional seasoning.
