  • 6 oz fresh blackberries + extra for garnish
  • 3 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 2 cups torn basil
  • 4 cups arugula
  • 1 ripe avocado, sliced

Instructions

  1. Prepare the dressing by blending blackberries, balsamic vinegar, olive oil, honey, Dijon mustard, salt, and thyme until smooth. Strain to remove seeds.
  2. Marinate the chicken in two-thirds of the dressing for at least 30 minutes (or overnight).
  3. Grill marinated chicken over medium heat until it reaches an internal temperature of 165°F (about 20-25 minutes).
  4. Let the chicken rest before slicing it into strips.
  5. Assemble the salad by combining arugula and torn basil in bowls and topping with sliced chicken, avocado, fresh blackberries, and pumpkin seeds if desired. Drizzle with reserved dressing.
