  • 4 yellow onions, sliced thin
  • 2 pounds Yukon Gold potatoes, washed and chopped
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup parmesan cheese, freshly grated
  • Fresh herbs: chives, thyme, sage

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook slowly for 40-50 minutes until golden brown and caramelized.
  2. In a pot of boiling water, cook chopped Yukon Gold potatoes for about 20 minutes until fork-tender. Drain well.
  3. Return drained potatoes to the pot; add butter, kosher salt, and half & half (or coconut milk). Mash until smooth.
  4. Stir in half of the caramelized onions and grated parmesan cheese until well combined.
  5. Transfer to a serving bowl, topping with remaining caramelized onions and fresh herbs before serving.
