  • 20 baby bell or cremini mushrooms
  • 2 tablespoons butter
  • 2 minced garlic cloves
  • ½ medium onion, finely diced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 4 ounces softened cream cheese
  • ⅓ cup grated parmesan cheese
  • ⅓ cup roughly chopped pecans
  • ¼ cup finely chopped fresh parsley (plus extra for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Clean the mushroom caps and remove their stems.
  2. In a skillet over medium heat, melt the butter. Sauté the garlic and onion until translucent, about 3-5 minutes.
  3. Finely chop the reserved mushroom stems and add them to the skillet with salt and pepper. Cook for another 3-4 minutes.
  4. Remove from heat. Allow to cool slightly before mixing in cream cheese, parmesan, chopped pecans, and parsley.
  5. Generously fill each mushroom cap with the mixture and place on a parchment-lined baking sheet.
  6. Bake for about 20 minutes or until golden brown on top. Serve warm, garnished with extra parsley.
