  • 2 pints cherry or grape tomatoes
  • 1 zucchini (sliced)
  • 1/2 sweet onion (diced)
  • 4 cloves garlic
  • 1/2 cup olive oil
  • 1/2 tablespoon garlic powder
  • 1/4 tablespoon crushed red pepper flakes
  • Salt and black pepper to taste
  • 1 block feta cheese (drained)
  • 1 pound pasta
  • 1/4 cup fresh basil
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). In a large baking dish, combine cherry tomatoes, sliced zucchini, diced onion, and whole garlic cloves. Drizzle with olive oil.
  2. Season with garlic powder, crushed red pepper flakes, salt, and pepper. Toss to combine.
  3. Place the block of feta cheese in the center of the vegetables.
  4. Bake for 30-40 minutes until golden and bubbly. Meanwhile, cook pasta according to package instructions until al dente.
  5. Once baked, mix roasted vegetables and feta with cooked pasta and fresh basil. Top with grated parmesan before serving.
