  • 1 pound boneless skinless chicken breasts
  • 2 medium sweet potatoes, diced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ cup BBQ sauce
  • 1 avocado, diced
  • ½ cup canned corn, drained
  • ½ cup black beans, rinsed and drained
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • ¼ cup shredded cheese
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat oven to 425°F (220°C). Season chicken with salt, pepper, paprika, and garlic powder. Coat with half of the BBQ sauce.
  2. Toss diced sweet potatoes in olive oil and sprinkle with salt. Spread on a baking sheet.
  3. Bake chicken and sweet potatoes for 25-30 minutes until cooked through and tender.
  4. Slice chicken and assemble bowls by layering sweet potatoes first followed by chicken and your favorite toppings.
  5. Drizzle with additional BBQ sauce before serving.
