  • 2 medium sweet potatoes, peeled and diced
  • 1 large yellow onion, chopped
  • 1 pound boneless skinless chicken breasts
  • 1 medium head broccoli, chopped into florets
  • 1/2 cup BBQ sauce
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a lined sheet pan, combine sweet potatoes and onions with olive oil, salt, garlic powder, and chipotle powder. Roast for 20 minutes.
  3. Add broccoli to the pan and place chicken breasts on top. Brush with BBQ sauce and roast for an additional 15-20 minutes until chicken is cooked through.
  4. Shred the chicken with forks directly on the pan and mix with remaining BBQ sauce.
  5. Serve warm in bowls with roasted veggies.
