  • 1 medium head cauliflower
  • ½ cup flour
  • ¼ cup cornstarch
  • ¾ cup milk (or plant-based milk)
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1¼ cup panko breadcrumbs
  • ½ cup mayonnaise (or plant-based mayo)
  • ¼ cup sweet chili sauce
  • ¼ cup Sriracha

Instructions

  1. Preheat your oven to 200℃ (400°F).
  2. In a large bowl, mix flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper. Gradually add the milk until smooth.
  3. Coat cauliflower florets in the batter, then toss with panko breadcrumbs until evenly coated.
  4. Spread the florets on a lined baking sheet and bake for 20-22 minutes until golden brown.
  5. Meanwhile, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar (if using) in a bowl for the bang bang sauce.
  6. Once baked, toss cauliflower with the sauce and serve garnished with chopped chives and sesame seeds.
