  • 8 cups chopped Romaine or Green Leaf lettuce
  • 2 medium tart red apples (cored and diced)
  • 1 cup dried cranberries or fresh pomegranate seeds
  • 1 cup toasted pecans
  • 4 ounces crumbled feta cheese (or Gorgonzola)
  • 2/3 cup extra virgin olive oil
  • 1/3 cup apple cider vinegar
  • 2 tablespoons maple syrup (or honey)
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Prepare the dressing by combining olive oil, apple cider vinegar, maple syrup (or honey), Dijon mustard, salt, and pepper in a jar. Shake well until emulsified.
  2. In a large bowl, combine chopped lettuce, diced apples, dried cranberries (or pomegranate seeds), toasted pecans, and crumbled feta cheese.
  3. Drizzle about two-thirds of the dressing over the salad and gently toss until evenly coated. Serve immediately with remaining dressing on the side.
