  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes in batches until browned on all sides; remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add tomato paste and cook for one minute to deepen flavor.
  4. Deglaze the pot with a splash of beef broth, scraping up any browned bits.
  5. Return beef to the pot along with remaining broth and add vegetables.
  6. Season with thyme, rosemary, bay leaf, salt, and pepper.
  7. Bring to a boil then reduce heat to low. Cover and simmer for about 2 hours until beef is tender.
  8. Adjust seasoning if needed before serving hot with fresh parsley on top.
