  • 3 boneless skinless chicken breasts (1 ½ pounds)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 5 tablespoons unsalted butter
  • 1 medium shallot, diced
  • 1 teaspoon garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 16 ounces potato gnocchi (uncooked)
  • 2 cups fresh baby spinach
  • ½ cup Asiago cheese, finely grated

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet over medium heat, melt 2 tablespoons of butter and cook chicken for about 8-10 minutes until fully cooked. Remove from skillet and keep warm.
  2. In the same skillet, melt remaining butter; sauté shallots for about 3-5 minutes until softened. Add garlic and cook for another minute.
  3. Sprinkle flour over the mixture; whisk constantly for about a minute. Gradually add chicken broth while whisking; cook for an additional 3-5 minutes until thickened.
  4. Stir in half-and-half and uncooked gnocchi; cook for another 5-7 minutes until gnocchi is tender.
  5. Fold in spinach and grated Asiago cheese until melted and creamy.
  6. Serve chicken on top of the gnocchi mixture, garnished with fresh parsley.
