  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter (cold, cut into cubes)
  • 110 g water
  • 1 kg apples (Pink Lady, Royal Gala, or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water (for filling)
  • 5 tbsp almond flour
  • 1 egg
  • 1 tbsp water (for topping)
  • 3 tbsp brown sugar

Instructions

  1. Make the crust by mixing flour, sugar, and salt. Cut in cold butter until crumbly. Add cold water gradually to form dough. Chill for at least 30 minutes.
  2. Prepare the filling by peeling and slicing apples. Cook with butter, brown sugar, cinnamon, cornstarch, salt, and water until tender.
  3. Roll out half of the dough and fit it into a pie dish. Fill with apple mixture.
  4. Cover with the second half of rolled-out dough. Seal edges and cut slits for steam.
  5. Preheat oven to 180°C (350°F). Brush crust with egg wash and sprinkle brown sugar on top. Bake for about 80 minutes until golden brown.
  6. Let cool slightly before serving warm topped with ice cream.
