  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 300 g granulated sugar (divided)
  • 1 tsp salt
  • 4 egg yolks
  • 600 ml milk (vegetable or lactose-free)
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste

Instructions

  1. Peel and slice the apples thinly. Toss them with 150 g sugar and salt.
  2. In a pan over medium heat, cook the apples until soft and caramelized. Stir occasionally.
  3. Whisk egg yolks and cornstarch in a bowl. Heat remaining milk, sugar, and salt until simmering; gradually combine with the egg mixture. Return to heat until thickened; stir in vanilla bean paste.
  4. Layer apples and custard alternately in a mold until ingredients are used up.
  5. Bake until set, then cool before serving.
