  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 3 tart apples (peeled, cored, sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the biscoff cookies and mix with melted butter. Press into the bottom of a springform pan.
  2. Toss sliced apples with brown sugar, cinnamon, and cornstarch in a bowl.
  3. In another bowl, beat cream cheese and granulated sugar until smooth. Add Greek yogurt, vanilla extract, cinnamon, ginger, nutmeg, and eggs one at a time.
  4. Layer half of the cheesecake filling over the crust followed by half of the apple mixture. Repeat with remaining filling and apples.
  5. Bake for 85 minutes or until slightly jiggly in the center. Cool before adding streusel topping.
  6. Mix melted butter with flour, brown sugar, and oats; sprinkle over cooled cheesecake and bake for an additional 15-20 minutes until golden.
  7. Chill in the refrigerator for at least four hours before serving.
