  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9-inch springform pan by wrapping it in tin foil and greasing it lightly.
  2. Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter until combined. Press into the bottom of the prepared pan.
  3. In a bowl, combine sliced apples with brown sugar and cinnamon; layer over crust.
  4. For the cheesecake filling, beat cream cheese until smooth, then mix in sugars, cinnamon, cornstarch, vanilla, sour cream, and eggs until well combined. Pour over apple layer.
  5. Prepare topping by mixing flour, brown sugar, cinnamon, oats, and melted butter; sprinkle over cheesecake.
  6. Bake in a water bath for 60 minutes or until set. Allow to cool gradually in the oven before chilling in the refrigerator.
