  • 45 lb beef shoulder roast
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons Dijon mustard
  • 1 red onion
  • 2 firm apples
  • Fresh rosemary
  • Fresh thyme
  • 2 tablespoons neutral oil
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Trim excess fat from the beef shoulder and season generously with salt and pepper.
  3. Heat oil in a Dutch oven over medium-high heat; sear beef until browned on all sides.
  4. Whisk together apple cider, chicken stock, Dijon mustard, and minced onion; add to the pot.
  5. Add herb bundle and garlic head; cover and braise in the oven for about three hours.
  6. Add sliced onion and apple; cover again and return to the oven for another 30-45 minutes until tender.
